生肖属牛的阿贤决定到新村拜师学做盆菜,宴请一班本地圈的主持人。汇集了十几种佳肴于一盆的豪华版盆菜,才一上桌,主持人就完全失去了理智。主厨更使出浑身解数,献上多道行色撩人的极品菜色,场面更加失控。今日菜单“盆满钵满”,阿贤马上给您上菜。
李雄记酒楼看起来规模不小,可是谁也没有想到,原来它最初成立时,只是一间住家式的简陋饭摊。
创办人李雄芳从18岁便开始当厨房学徒,如今已经累积了25年的下厨经验,他所烹调的家乡小菜极具新村风味,创意菜式更是不计其数。尽管多年来都隐身在一个华人新村里头,可是李雄记酒家却早已声名远播。
李雄记的盆菜分豪华版与普通版。豪华盆菜(RM 480++)分量超大,材料丰富,在热腾腾重甸甸地出场时,无不叫人高声欢呼。
盆菜当前,食客可以各取所好,一次品尝多种食才,再说一菜一品味,整个盆菜就如同百宝盆一样,荟萃了百菜百味。
把盆菜放到炉火上边热边吃,更是汁液交融、香气四溢,尤其是大伙儿团团围吃,肯定红红火火,情趣盎然!
其实别说豪华版的盆菜,就连普通版的盆菜(RM238++),对阿贤来说,也已经算非常豪华,叠得满满的10多种食才,包括脆皮烧鸭、椒盐大虾、菜园白斩鸡、无骨家乡酿马友鱼、西兰花、白菜花、卤花肉、珍珠鲍贝、海参、猪脚、鱼鳔、香菇、白灵菇、鸡脚和豆筋等等,丰富得简直叫人看一眼就心花怒放。
然而,阿贤还真后悔来拜师学做盆菜,因为做盆菜,可不是所有材料都丢进盆里,让它一锅熟那么简单,而是每一道菜都要个别烹煮,10几种食才,便需要十几种煮法,蒸、煮、涮、炖、煎、炸、炒、煨、焖、卤和烧等等,总之你能够想到的煮法,几乎样样都要搬出来,样样都必须精通,单是煮这十几种菜,就至少耗上2个小时了。
盆菜来源—传说中大概在7百多年前的南宋时期,蒙古军队大举南侵,结果宋帝在朝臣的护送下,来到了香港新界一带的围村,由于缺乏粮食、饥寒交迫,结果获得当地村民殷勤招待,可是一时之间又找不到那么大的容器来盛装食物,于是村民急中生智,用了一个大木盆把所有菜肴都放在一起,这就是传说中盆菜的起源。
其实,吃盆菜宴原本是香港新界围村的习俗,使用的食材平凡朴实,一点也不衿贵,而如今加入了山珍海味的盆菜尽管早已离经叛道,可是正因为华人好吃,更喜欢好意头,因此聚集了一身好意头、同时又能海纳百川、加入多种食才的盆菜,便逐渐成为普罗大众过年过节的喜庆菜了。
猪油捞饭—主厨特别精选日本珍珠米,放到小瓷碗里拿去蒸,出炉之后再淋上香浓惹味的猪油和酱油,珍珠米饭每一颗都饱满利落,饭身闪闪发亮,吃起来柔韧爽口,猪油的极品香味,喷香诱人。而且只要细尝慢嚼,满口都会是久违的旧时米饭香,轻易就唤醒了尘封多时的美味记忆。
糯米鸡—是一道功夫多、卖相好的视觉手工菜,新鲜菜园鸡必需先剥骨起肉,并同时保留鸡皮、鸡腿和鸡翅膀完整连结。
大家可别因为主厨熟练的手法,而误以为这是一个轻松的步骤,实际上,主厨曾经受过一天起60只鸡骨的训练,手法才如此驾轻就熟。
而盐渍过的糯米则要连同腊肉、虾米和调味料下锅翻炒,再放入蒸炉里蒸,主厨随后就会把出炉的糯米塞酿进鸡腔。最终斩件上碟的糯米鸡,外皮酥脆,内馅软糯丰满。
茶壶汤—可不是一般水滚两滚的速成汤水,讲究真才实料的老板,下足材料蒸煮,并让材料在茶壶里浮沉翻腾长达4个小时。
难得的是,出炉的茶壶汤清澈不浊,汤面金黄纯美,浓淡正好,含一口让它缓缓地流进口腔、食道和肠胃,你会马上感受到每一个部位似乎都得到滋润,顿觉健脾开胃,心平气和。
凉拌巴姑菜— 属于蕨类植物的巴姑菜是不可多得的有机野菜,老板使用了有别于一般的方式来烹调。汆烫过的巴姑菜只需要加入以橘子汁、鱼露、小葱、辣椒等等调配而成的调味料凉拌,再撒上爆香的虾米便可以上桌了。简简单单的煮法,就足以让巴姑菜吃起来清新爽口,尤其是依旧卷曲、还未舒展的嫩叶,咬起来更是鲜嫩爽脆。

盆菜的底层一般都会叠一些比较湿、比较会吸收汤汁的材料,而比较干身的食才则会叠在上层。

i hv try it….. the poon choi okok lo…. meat taste good… the price oso consider ok la, say tooo expensive say tooo cheap oso not…. but, meat tooo much……chicken, duck, pork… variety of meat ohhh…. i prefer vege more is better……

april: poon choi is like this 1 lar…. if more vege, that is not name as poon choi but is vegetarian lar…. i also tried the poon choi at chuai heng, taste is ok but the quantity is very little… 1pc/pserson….

I went to this restaurant after you recommanded it on astro , i went there with another 7 friends , all of us are from Malacca . i don’t think we can get there if without GPS , really kampung huh ~~ We ordered vege , pork oil rice , tea pot soup and of course Poon-Choi .
Be honest , the Poon-Choi was so so … coz the dish was served in cold by without warm it . the vege was ok and i like the soup and pork oil rice . Errr … Nothing special with the chicken though . We would like to try everything that you recomended and at the end , the dishes were too much for 8 person and we had to ta pao …
We back with disappointed coz the Poon-Choi really not that delicious as what we expected .
Anyway , i appreciate a lot for your efforts to bring us all the nice food .

The Poon-Choi not so good, but they have other food very delicious also, especially roast duck, my husband love it so much.

服务态度不是很好,食物有点咸。
有什么好吃?好吃的是什么?根本一点特色都没有!那天母亲节跑去吃,反而还给那老板“砍菜头”!!!!这间店之从上了“阿贤的节目”后就生意超好,那是拜阿贤出名所赐,不是因为这家的“盆菜”好吃啰!价钱又贵又不好吃,真不知道是谁介绍给阿贤的?
是的,忘了说那猪油捞饭…..一点猪油的香味都没有?酱油捞饭还好吃过它……妈妈家煮的还比它好吃!

went ther during CNY, and it was packed with people..almost everyone in the restaurant was ordering poon choi. the most impressive part was that we need to make a reservation, walk-in does not get us a seat. wow, what powerful impact jason has on this restaurant..lolz..btw, my fren tried it b4 and says that it is not really nice and the food is really oily..well,i;m nt sure.nv tried before.

The 李雄记 is really not that nice now as it used to be before.
I guess this is largely due to the overwhelming support given by the customer.
Previouly they are quite good, the food is nice too.
But now no more!when there are many people, the food served is not only lousy, expensive, and the service is very bad. Is really not worth to go and “KEK HEI”
At during the father’s day, the food serve to us “looks like left over by some others”
Think twice before you go. My father inlaw use to love the restoran as he is a sungai bulohrian. Now he refuse to go!
