肉骨茶和面线,原本互不相干。
可是吧生加埔蔡氏夫妇的结合,竟然无意中为肉骨茶和面线牵线搭桥,催生了另一道马来西亚美食—肉骨茶面线。
原因很简单,他们俩一个出身兴化手工面线世家,一个源自于肉骨茶家族,两人情投意合缘定终生,于是就孕育了这个特殊的“爱情美食结晶”。先生负责制作面线,太太则全心全意地将另一半的心血成品,炮制成别具风味的肉骨茶面线。
两人各司其职,里应外合,劳逸互补,一道美食让人品尝出夫妻之间的相处之道。
弹性十足、柔韧爽口的传统兴化手工面线,搭配香气四溢、浓醇滋补的肉骨茶药膳汤头,味道简直就是浑然天成,条条分明的面线落汤不糊,味道与口感和肉骨茶绝对匹配。
除了独门首创的肉骨茶面线,店家的拿手好菜还包括炒面线、东炎面线、红酒面线、鱼肉面线和糊面等等,无一不是蔡太太的巧思。单是一道面线,就能烹调出那么多种口味,几乎“物尽其用”了丈夫辛劳制作的面线。
“炒面线”看似简单却最考功夫,一不小心就会把面线炒糊炒焦,然而店家的炒面线却清清楚楚,条干分明。吃起来火候到味,鲜香四溢。
两天一夜 一吃知高下
兴化手工面线和普通面线到底有什么分别呢?食客只要吃一口,就足以分出高低。
兴化面线身材略显粗线条,可是却出奇爽口、有弹性。然而制作这种面线却是每一撮都得来不易,擀压面团、切成条状、重复三次搓拉面条至细如婴儿尾指、串面、重复多次让面条发酵超过4个小时,最后拉成长达12尺长的面线,然后还要放在太阳底下晒至少两个小时让它自然风干。耗尽了大约两天一夜的时间,面线才算大功告成。
这来来回回才赚你几块钱的工作,在如今样样都讲究效率的商业社会,或许已经很少人愿意投入。

after watching the TV program just now, it’s really draw my appetite, i will give a try this coming holiday.
Just watched this series from the AEC, that’s really not easy to produce the “mee sua”. I am “solute” to your professionalism to work on this series, really not easy to shoot during these 2 days.
Keep it up and look forward more and more interesting coverage from you.

i hv been a fan of this program. however in today episode, i am sad bcos axian shows little respect to d traditional skill & old master. axian merely treat it as playground only.

few years ago i stil stay at Section 17 Petaling Jaya, had one YOU CHAI KUI on night time, i forgot the road name (but the stree morning is Pasar) wow ! really very nice but now dun know still have there or not ? i very miss the You Chai Kui !

I was try the “mi suah BKT” , the “mi suah” is ready nice, i give AA. but the “bah Ku teh”……..i only can give C or B-.

肉骨茶面线我已吃了两年多咯,但并不是阿贤介绍的这间。我是在我家乡霹雳州的一个小镇班台吃的。。味道蛮好的!!但还是很想到吧生这间吃吃。。。
