一口吃下一块肥美惹味的叉烧,不只毫不费劲,对无肉不欢的人来说,更是一件畅快豪爽的味觉享受,难怪广东人会以“生块叉烧好过生你”这种抬高叉烧、贬低孩子的意气说话,来责骂自己的亲生骨肉。

一块叉烧的身价绝不卑微,撇开高档酒楼的天价叉烧皇不说,就连街头巷尾茶室饭店内的“靓叉烧”,如今也因为走势看俏而不再便宜,譬如吉隆坡同善路的叉烧名店“明记叉烧”的一人份叉烧,卖6、7块钱根本不算过分。

拥有20多年烧叉烧经验的店家,坚持选用价位较高的五花肉。半肥瘦的五花肉买回来之后,店家还会把太肥的部分切除,既贪图五花肉的嫩滑肉质,又不想让它等同于胆固醇的肥态尽露,实在用心良苦。

而且店家认为选肉和切肉同样关键,切法会影响肉质纹理和厚薄程度,直接决定了每一块叉烧的口感与嚼劲,所以这20多年来,他总是亲自“操刀”切肉,一点也不敢掉以轻心。

制作叉烧酱的调味料包括白糖、盐、味精、黑酱油和酱油等等,店家会连同处理过的五花肉搅拌均匀,腌制长达1个小时,然后才开始用烤叉穿肉,放入传统炭炉烧烤。

在3个小时的烧烤过程中,店家还“三番四次”地将叉烧取出,然后重新淋上厚厚一层的叉烧酱腌料之后,再放入烤炉内。

因此,传统炭烤叉烧的外观色泽,绝对不是俗气的染色包装,而是一种一而再、再而三地腌制,然后不厌其烦地回炉再烧,烧至通透入味、发红发亮的真正肤色。

这也是为什么一块“靓叉烧”,出炉时都总是漏着油、流着蜜,看似裹上了一层厚厚的外皮一样,全身通红发亮,外皮酥脆焦香,肉质则软嫩多汁。咬下一口,肉香、油香、炭香和甘香等多种香味让人吃得满口生香,既肥美惹味,又肥而不腻,绝对适合下饭。

听说叉烧原本不叫叉烧,而叫插烧,插进去烧的意思,因为早期当人们烧全猪时,会把猪的里脊肉也插进去猪的腹部里去烧,不用任何叉子。但是这样烧得不多,后来他们就想到用叉子直接叉着烧,结果“叉烧”开始取代了“插烧”,成为广为人知的名字。

隐身在一栋老房子的明记叉烧,其实并没有挂上任何显眼的招牌,只是在摊子的玻璃柜镜面,粘上明记叉烧的字样,却依旧吸引了八方食客远道而来品尝其独门叉烧。

在明记叉烧,还可以看到传统的高跟碟。

一支短短的烤叉,竟能让店家串上30块叉烧,入炉烧烤。

明记叉烧每吃一口都酥脆香口,软嫩多汁。半肥瘦肉涂抹上糖、酱油等叉烧酱,让烧烤过程中分解出来的油脂和糖浆缓解火势,使最终出炉的叉烧不至于太干、太柴。

早年在咖啡店工作的店家,经常看着云吞面小贩烧叉烧,后来在1986年,身为厨师的弟弟刚好开了一家叉烧摊子,叫他过去帮忙,他于是便开始从实践中学习做叉烧,更在两年后正式接手经营这家挂着弟弟名字的明记叉烧。

    Yes, that’s the most delicious “Char Siew” that I ever try.
    You can’t stop taking it, RM10 for a plate but still feel worth the money.
    They also sell steam chicken but the taste is so so only, need to tell them don’t put too much sauces (will become too salty).
    The place is always pack with customer, make sure you order enough as it take time to waite for another round.

    i feel tat the staff at there was very rude…they like to scold customer…the charsiew was not nice…it is very dry and contains a lot of fat…the appearance of charsiew is so much different compared to the picture that shown…furthermore…inside the restaurant is fulled of smoke and very smoky…anyway…this is my own opinion…sry if i offence u…

    There is one charcoal ‘char siew’ in Kepong,second row of shop opposite Jusco, the shop name is ‘ da kou fu’. They serve very nice ‘char siew’.

    Today go to tapau, i order 2 chicken mix with char siew and one char siew only. you know how much? Cost me RM18 and just got few pcs char siew only. Not worth it and somemore the workers that not so friendly. compulsory people must buy mix with chicken.

    Harlo Everyone~ I’m back from 阿头肉骨茶 and 毛山稿肉骨茶 post, this my third on the foods.

    Been to this place few weeks back, and just like previous comment from Carmen Lim, the the foods are seriously expensive. If you hav watched the axian episode on this one, u will not forgetting the price is from RM6+ but now a small small one plate char siew will cost u RM8 not including rice. Asked for one plate of char siew and 1 big 1 small rice total RM9.50, the price is b4 the raw rice crisis.

    I duno why many of them like to increase the price after having some good advertising. This is strongly NOT RECOMMENDED and will only raise up the dislike of customers.

    Back to the quality, its tasty, nice charsiew i can said, just like how it shows on TV. But what i get is drier part, 瘦肉, and u cant choose either. value on money? negative since its just a few slices for 8bux. Anyway my time they dint force me to buy chicken with char siew, perhaps they changed their regulation? lol~

    This is one kind of expensive food, bare in mind.

    阿贤哥,你介绍这家叉烧店,我曾经光顾了好多好多次,味道不错,但是我想批评一下这家店的服务态度哦…..或许是经过阿贤哥你帮这家店打过广告的因素….这家店的服务态度和以前来比…真正的大打折扣…好差…太没礼貌待客了…希望这家店的老板和他的工人看到这个email,可以改善一下自己对客人的服务态度…….虽然食物不错….但是态度也不需要太嚣张吧…….

    Hi I juz went to try the char siew on 2 weeks back when I was in KL. I didnt eat in coz full of ppl and the place is small and not so good ventilation. So I “tar bau”. I bough 1 packet of char siew rice cost RM 6. They didnt enforced must mix with chicken but I strongly agreed with some of u here that the auntie who in charge of d tar bau stall is very rude and not friendly.

    Before me is a guy that wants to order for few packets (cant remember how many he bought) with some want chicken wings lah some want char siew only lah…. The old lady is very inpatient and her attitude is like want to buy faster tell what u want lah dun waste my time….

    Woh! Is this the right way to treat a customer ?

    If not because Ah Xian has strongly recommended that d char siew is very nice I think i will juz walk away….(even though am not d person who got scolded)

    The char siew is quite nice but if the service is lousy…..i think better not eat lah.

    也并没像电视节目般的卖相好和好吃!
    我对他们家叉烧的评语是: 凉,干,硬,贵!

    as everybody says, food is made to make ppl happy. why bother about service and environment if your purpose is to try the food and enjoy the food. Personal opinion, hope it wont offends anyone. We mind our own business, our own word, our own purpose. If one is clear about his/hers purpose, good enough. We are there to enjoy the food, not to enjoy being served. The food is the thing that make you happy. Not they way the ppl serve you that makes you happy. If that’s the case, just pay someone to make you happy! 一个人如果看另一个人不顺眼, 那也许是个人的修养还不够. 学会低头看地上,看自己, 不要只是抬头仰望, 看他人的不是. 每个人都会有脾气. 不代表我们给生意他们, 他们就一定要对我们必恭必敬.

    I went to this shop one year ago. The service is lousy, the waiter is rude, and the place is dirty full with smoke.

    When the bill came, I just too shocked by the EXPENSIVE PRICE!! Too EXPENSIVE de, without good service. Although the food is delicious, but still not worth it!!

    No nextime!!!

    ah xian… thank u for introducing all good food to all food lovers.. i would like to recommend a very authentic and delicious roast pork rice stall to u ppl out there.. it is located at Jalan Bunga Raya, Melaka.. if any of u have been to Melaka u’ll surely heard of a very famous fried ‘O’ chien (oyster egg) located at a pathway in the middle of Jalan Bunga Raya… The roast pork rice is just beside the pathway… it only opens daily from 11am till appx about 1.30pm.. anyone who has a chance to visit Melaka pls visit the roast pork.. :)

    明记我还没试过,但附近的海外天酒楼的叉烧就试过,在jalan imbi的,真是目前本人觉得最好吃的叉烧!!外脆内软,富有嚼劲,味道甜香刚刚好!!!比一般叉烧大块,更有口感,但价钱也比一般叉烧贵几倍….但爱叉烧者必试,比jalan lokeyou的享记好,比belakong新村的好。不过看了阿贤的节目,怀疑叉烧是不是从明记拿过来的…

    Everytime after Axian visit, the price jackup and customer once to try and created poor in custmer service. I hope Axian can advise to the place you visit, to agree with the boss the above thing will not happen.

    我个人认为现代人出外用餐,除了要求食物色、香、味、俱全之外,还有就是服务。是的,可能你们认为食物好吃就算了,服务态度怎样无所谓;要好的服务就要花多一点钱去五星级酒店/高级餐厅享受。可是别忘了,小贩也是其中一种服务行业。我不是说给少少钱,要求多多,只是基本的礼貌也应该要有吧!顾客是米饭班主,就好像你老板给钱你还要给你骂,有酱的道理吗?打个比方:如果今天你花钱吃饭,可是给人以不礼貌的态度对待,好像讨吃那样;又或者业者安排你坐在垃圾桶/厕所隔壁,那不是花钱买难受吗?你不要骗我说你很开心,很期待那还未上桌的“美食”!要知道全世界不是只有一档卖好吃的叉烧!(以上纯属个人言论,别介意。谢谢!)
    P/S: 稻米越成熟,头垂越低。钱在我口袋,如果我不喜欢你的服务态度,你永远也赚不了我的钱。

    The price is much more expensive than hotel ones. I suggest we boycott the place. The portion is too little. The price is unreasonable!! I wonder why ppl jammed that place everytime. For me i’ll boycott if I find the place not worth of time & money & service Otherwise I’m just contributing to the situation ie make it worst!! So dont be one ok!!

    Yup the price really expensive. If want to try nice char siew in PJ, the aman suria “seremban restaurant” also not bad…..BUt for those who require good service, this type of kopitiam really not that good la……

    The place is extremely dirt & dusty. I went there just to order ‘3 packs for take away’, however I just couldn’ t have the heart to buy when I see the condition of the
    shop. Since I purposely drive there to try the char siew,with a heavy heart I place only 2 packs because if
    I didnt order, I have wasted my time driving down from
    Ampang just for nothing. My children after trying the
    char siew, l pack was eaten partially. Their comments,why waste your time going there to buy,not
    nice, very hard and dry.

    那里的叉烧的确好吃,我每次以以上的经历向朋友形容它的好吃程度。

    Wah… Candice & xiao ren wu, I doubt you’re from the Ming Kee Char Siew shop, if every body think like yours, we will never get improved…

    Basic courtesy is a MUST no matter 1 star or 5 stars… it’s nothing regardless to the standard… Those really good taste will possessed a decent attitude, else it can be only second class forever. I just don’t understand why some people willing to lose one’s dignity for a merely second class food…..

    Honestly speaking eating a bowl of char siew rice cost RM8.00 is way too much. Let me share the experience of a good char siew, when u put a slice of char siew into your mouth the aroma of the bbq pork rose the moment you start to chew & that fat layer pork eventually melt inside your mouth and that is a really good & tasty char siew and it only cost you RM4.50. Wanna try it out ?
    It is at Petaling Jaya , Paramount Garden Jalan 20/7, directly opposite Seaview Restaurant. Bon Appetite.
