一颗半生熟蛋、两块面包，还有一杯咖啡，是几十年来许多人既简约又充实的精力早餐。

虽然这再简单不过的早餐组合，在哪里也吃得到，不过在海南人的传统咖啡店，却偏偏有一种难以替代的氛围，召唤着老顾客的味蕾。



自1945年开始营业的中国旅店，正是这种坚守岗位的传统咖啡店。店里店外的装潢摆设，60多年来如一日，处处焕发着上个世纪6、70年代的怀旧气息。

难怪，这里的咖啡、面包和蛋，卖相也格外有尊严，有气质！

尤其是“蒸面包”，简直叫人迷恋！蒸得热气腾腾、柔和服帖的白面包，涂上独家自制的咖央，再夹入一片刚从冰箱里取出的雪藏牛油，说时迟，那时快，牛油瞬间就融化在面包的余温里，情不自禁地和咖央相互交融。椰香和蛋香在牛油的挑逗下浓香扑鼻，咬一口，时热时冷、时甜时咸，味道让人没齿难忘。

店家采用的是传统特大号的白面包，这种面包既松软、又有实在的内容，够筋度，也够饱肚。虽然无法媲美现代机械化面包那种方方正正、工整美观的外形，却胜在多一份人性，多一种传统风味。

曾几何时，上一代人都把半生熟蛋视作是滋补食品。“多一分太熟，少一分則太生”，半生熟蛋的最佳境界，便是蛋白乳白色，蛋黃却依旧保持金黄液狀。

店家的半生熟蛋一旦敲开两半，乳白色的蛋白和饱满的蛋黄便各就各位，可是只要轻轻一戳，蛋黄随即放下矜持，与蛋白水乳交融起来，视觉效果诱人食欲。如果再添一点酱油和胡椒粉，那么蛋黄、蛋白、酱油和胡椒粉四者产生的美味化学作用，妙不可言，蛋香久久不散。

49f1.JPG正所谓“水滚咖啡香奶滑”，中国旅店的传统咖啡棉滑细致，滋味回甘，淳淳的咖啡香在口里残留，让人无法忘怀。

既可以同时烧水泡咖啡，又可以蒸面包、烤面包的炭炉，尽管不是什么前卫突破的设计，却是先辈们在求生的过程中自然衍生的小点子，不单解决了他们的生计和技术问题，还可以在物质匮乏的年代节省不少资源。

49c.JPG南洋风情的咖央和西式的雪藏牛油，在传统海南人的咖啡店里，有了一次跨文化的美食交流，从此一拍即合，成了传统华人咖啡店的招牌之一。

享用半生熟蛋最畅快的方式，便是一口气連吸帶喝般咕噜咕噜地吞进肚子里！这么说起来，半生熟蛋岂不是用喝，而非吃的咯?!

当年，店家父亲是从中国海南岛飘洋过海南来。离乡背井在异地讨生活的他，因为非常怀念原乡，于是把店取名为中国旅店。

对有些人来说，唯有在传统海南咖啡店，那种用时间一分一秒、踏踏实实地酝酿出来的怀旧气息，最容易触动人心，也最能唤起那些蕴藏于面包、咖啡和半生熟蛋背后的种种回忆。

拱形的走廊旁刻上店号4个大字的中国旅店，是典型的华人旧式咖啡店，楼下是咖啡店、楼上则是客栈。由于立卑在英殖民地时期是一个著名的金矿中心，地点更位于东海岸的中心点，许多过路客都会选择在这里歇脚。

    For those in KL, u can try this toast box outlet in mid valley.It is quite good too. Comes with one set inclusive of coffee, toast bread and 2 half boiled eggs.

    i last weekend from kl went to Kuala Lipis to try it.the food is ok. exspecially the eggs are very fresh. it is good to try it. but the service is really bad. we from so far travel over to try it. but the boss, boss lady like not welcome us.even we order the food, they seem like not really want to do our bussiness. feel a bit disappointed..

    只是现在也越来越少了，因为老一辈的海南人去世或退休，想吃也很难了。

    不过周末在家我就自己弄生熟蛋吃。
