干肉骨茶 干柴烈火 (Dry Bah Kut Teh)

肉骨茶天生湿漉漉,一身药材汤味,可是年仅16岁的叶志安,却用烈火旺炒肉骨茶至浓稠干身,以“干肉骨茶”成功抢滩。

年纪,果然不是问题!叶志安自小在肉骨茶店长大,两年前开始跟父亲学习烹煮肉骨茶,才学了短短几个月,便青出于蓝, 胜于蓝!他所炮制的干肉骨茶独树一格,尝过的人几乎无不拍手叫好,甚至还有食客上门指定要品尝他亲手煮的干肉骨茶。

看他如何熟练地在砂锅里加入辣椒干、炸香的鱿鱼丝以及事先用肉骨茶药材熬煮的肉骨,并开旺火添加蚝油、黑酱油和羊角豆一同翻炒,同时潇洒地抛锅增加锅气,你就不得不承认年纪小小的他,确实有烹饪的天分。

炒得几乎干身的肉骨茶,卖相类似宫保鸡丁。浓稠的酱汁裹身诱人,咸甜香辣,多重滋味,绝对叫人尝了第一口便停不了口。店家精选、肥瘦兼备的猪肉,经过旺火一炒,肉油渗出,滋润了肉质,口感更加爽滑,味道少了一些中药味,却多了一份鱿鱼丝的鲜甜和辣椒干的呛辣,非常适合下饭。

可别以为干炒肉骨茶是一项简单的任务,在短短的时间之内,要用旺火炒得既干身,却又不能焦身,火候的控制绝对重要。力度不足,或过了火,最终出炉的肉骨茶水准都可能天差地别。

一开始用旺火翻炒,让调味料通透入味;之后放缓火势,让肉骨在由热转凉之际收缩,把肉汁锁住;上桌前的最后一分钟则将火势调到最猛,让肉骨达到微焦未焦、锅气十足的境界。

孩子煮得一手好肉骨茶,身为启蒙老师的父亲,完全归功于孩子观察细致入微、过目不忘的天赋。的确,叶志安对酱汁多寡的拿捏和火候的照顾细致精准,然而父亲给孩子自由发挥的空间,也是这一锅干肉骨茶的绝佳调味料。

是空间,让天分得以发挥,是空间让创意得以萌芽。

店家原本只售卖普通肉骨茶,后来才把煮出来的肉骨,再次下锅干炒。

所有用来干炒的肉骨,都必须用一般肉骨茶药材精熬数小时。

    不止干的,还有汤的肉骨茶也蛮好吃的,下次不用两边跑了,来一间就可同时享用干和汤的肉骨茶了,而且还听说他们在吧生也有几间分行哦….听说其中一间好像是在吧生BANDAR BARU KLANG ,WINDMILL的对面,应该是叫叶泉咯…….

    The Klang dry Bah Kut Teh , Have few places, Meru, Taman Sri andalas and Taman Chi Liung Pandamaran or Port Klang. The Best I feel is at Pandamaran and Port Klang. Pandamaran one call Yap Meng ( Hokkien ) at the Monday Night Market street of Taman Chi Liung, the road at centre of Shell and ExxonMobil Petrol Station, somewhere near the Pandamaran Seafood Street. Port Klang one is at Jalan Tengku Badar ( Samy Road ) under a big tree near a Speed 99 Market shop. Xian, you may try a fried fish at Taman Sentosa Klang, they are original from Pulau Ketam.     试了叶全这间,还是觉得吧生圣淘沙那间”叶荣” 干肉骨茶味道比较好!它的香味让你吃了还想再吃,和叶全是兄弟吧。大家可以试看看。如果不想去吧生,PJ 还有一间,在SUNWAY MAS。叫顺兴。 味道也好好,卫生环境非常好。有空去试试吧!!

    Hi, I have been to Puchong and 1st tried axian recomended food. The Dry Bat Kut Teh was really tasty! However, service is terrible. We order 1 dry bat kut teh & 1 vege. When we ask “any soup?”..huh.. tat gal replied “wait lar!” We like kena ‘hit badly’ with her replied. It was really rude! AND..they forgot our vege… We just paid the bill w/o vege and left quickly. NO 2nd chance!

    very bad service, i ask the waitress to recommend what special food int their shop. The waitress simply said got dry bak kut teh lah,
    soup bak kut teh… n “po lei shan choi”. nothing special in their shop????????
    after waiting 15min, the order “dry bak kut teh” come, after taste, i have 1 word to said “didn’t come to tis shop again” bad service n the thing not fresh n two person order but the Pork are very very little………. !

    还有, 这张地图是错的
    从Pusat Bandar Puchong 直走, 左边 Giant 右边Tesco, 这条路是LDP, 再继续直走就会看到Putrajaya路牌, 转左上桥靠左边路, 青红灯转左, 这时DHL在你右手边, 直走看到青红灯转右, 过后直走经过印度庙(在右边), 注意蓝色路牌, 写这Sekolah Rendah Han Ming(转左), 当你转左过后, Han Ming 就在左边, Han Ming 对面有两排店, 肉骨茶就在第二排角落, 找找看吧 ^^

    no matter what….dry bakuteh absolutely not my keen..sorry. Bakut is meat, teh is the soap…..if you say dry bakuteh….not genuine any more. i preferred the orignal one , not the enovated one….don try to change it…..if they want to do it this way…..must well change the name dont call it bakuteh…..

    I frequent this restaurant every 2 month once. Dry Bah Kut Teh is really tasty and special recipe. Just before the H1N1 Swine Flu infections, the service was bad as sywiser said, even soup addition was in small portions.. but recently , the service changed.. is it due to less customers willing to take in pork ? :D
