锅气,是中菜的精髓之一。华人煮炒若少了爆锅抛锅的声音,就很难掀动食欲。

曼谷巷印度炒面摊主“马布”似乎不让华人专美,尽管其快速转锅和猛铲快炒的方式,与华人增加锅气的手法大不相同,却有异曲同工之妙,炒出来的面同样锅气十足。

别小看这些一炒一铲的动作,要确保面条最终有着均匀亮泽,又味浓身干,摊主说这些动作虽然看似简单,却不能掉以轻心。而我自己动手去炒之后才发觉,原来摊主的每一个动作都先后有序,力度轻重有别。

这便是源自于劳动人民每一天的生活积累,每一份积累都有着厚实的生活智慧。

用旺火炒得热气腾腾、“面红耳赤”的印度炒面( Mee Goreng),在上桌时还添加了青菜丝和酸柑。下足自制番茄酱和辣椒酱去炒的面条,姿色迷人。冒着烟的面条藏不了咖喱鱿鱼片的诱惑,趁热挤上酸溜溜的酸柑汁,连着鱿鱼带面吃,味道酸甜呛辣,叫人大喊过瘾!

至于印度捞面(Mee Rebus)则像是印度炒面的温和版本,配料和酱汁大同小异,经过汆烫的面条和配料,伴有开了胸膛的水煮蛋,除了淋上番茄酱和辣椒酱,还添加了马铃薯甜酱。 每吃一口,味道甜酸咸香,叫人忍不住连汤带面,把它吃得一干二净。

或许有人会误把印度捞面和爪哇面混为一谈,可是只要有机会尝一口传统原味的印度捞面,尤其是其浓郁丰富的酱汁,你便不难分辨出这种独具一格、渗透着殖民地色彩的印裔美食。

子承父业的摊主说,早在他还没出世,父亲就已经开始经营印度炒面,时至今日,至少已经有70多年的历史,所以食客们相信这是其中一家历史最悠久的印度炒面。一个小小的炒面摊子,便见证了这片土地从英殖民时期、日治年代到独立所走过来的点点滴滴。

 尽管摊主已经年届53岁,却每一天都风雨不改地为顾客献上自己也引以为荣的祖传印度炒面,态度乐此不疲,或许他也很清楚,自己每一天的每一撮面条、每一汤匙酱汁和每一碟炒面,都不只是在传承着父亲的炒面智慧,也在延续着相信是最早在这片土地上安家落户的印度炒面。

摊主是一个不折不扣的印裔回教徒,擅长说多种语言,尤其他那一口既流利又标准的福建话,连福建人听了也拍手叫好。

传统印度炒面的配料计有豆芽、马铃薯、豆干、虾饼以及咖喱鱿鱼。

咖喱鱿鱼是摊主的卖点之一,用了多种香料熬煮的鱿鱼香辣鲜甜。

这家店不过是一般普通的华人咖啡店,可是每一天从早上到下午都挤满了不同种族的顾客,大家似乎都是为了这一摊印度炒面而来。炒面功底深厚的摊主马布再怎么手勤脚快,也似乎总有炒不完的订单。

    I saw in AFC the singaporean food show where the host asked people(like taxi driver, the public) to vote for the best fish head curry in singapore.

    Over here, we might do it like voting for the best mee goreng in penang, or the best assam laksa in penang.

    But what if it turns out that the Bangkok Lane mee goreng loses to Market Cross mee goreng? or Ayer item laksa loses to BB’s laksa?

    My heart may not be able to take it!!!

    you should go try MEE CRC at jalan larut penang.[beside sheraton hotel].the best in town n the oldest in penang since 1908.

    I have try this Mee Goreng, it is over rated. The Sotong have to use Magnify Glass to find. Even not tasty and totally not special Also the price very expensive RM4 per pack. As i saw the Ah Xian show only RM3.5. I sudah kena tipu :(

    Beside this , that Indian fellow hire a younger man to cook. Each time he cook can produce at least 6 plates. As i know if fried many plates per time will lost it taste due to deficulty to control the ingredient and sauce. Also, last time he sell only RM2.00 per plate. After Ah Xian visit them, they increase the price to RM4

    that is a place for mee rebus n mee goreng in Penang, it is very yummy than the bangkok lane..its location is in Esplanade, Penang.an open air council coffee shop. selling malay n india food.
    though the price is more expensive than other but worth to eat, dont go during lunch hour, it needs to wait for more than half hour to get your food.

    I am fan of the Bangkok lane mee goreng for over 30 yrs. I believe those who pay rm4 for a plate are with extra sotong!
    My tips for the nice mee goreng are.. add some mee rebus kuah.. then u will like it.

    Well…..I know the Bangkok Lane Mee Goreng for a long time…..I couldn’t say it is bad but I think Mee Goreng at the Esplanade is way better…..I recommand people to go try there first before u vote.

    Cannot stand……and too much sotong …..maybe called mee sotong!!!
    Got better one in Bukit Mertajam…..near Jln Sentosa….”Caltex”

    Gurney Drive’s food is throat slashing… There is a stall that sells good Mee Goreng for only RM2.70 opposite Cheah Kongsi entrance at Armenian Street.

    Gurney Drive there have a stall selling mee goreng and pasembur. Near the 7 eleven there, those who likes spicy food, can go and have a try! To make the mee goreng taste become more nicer try to add in some vinegar..taste will be definately different!! Hot and sour mee goreng,have you try it b4?? Haha…. go and check it out!! I’m sure you guys will lovin it!!!

    I went to this famous mee goreng stall with my whole family last few days ago.
    We were happy that most of the indians that served the order can
    speak hokkien very well +^^+

    However, only bad thing is the mee goreng is not very good as it said now.(maybe bcoz it was prepared by other staffs – not the person showing in this picture).

    For drink -Tea tarik also bit sweeter and lack of tea’s fragrant.

    My waiting hour before get the food. (+- 30 mins).

    Hope next times i dropby Penang, can taste the mee goreng
    prepare by this person on the photo.

    This store not so good for me. When you people go to Penang you should try the one at around Penang Hill side (Kedai Kopi Asia b-4 the Penang Hill round about on the left). But i warn you, you must wait for turn-cause ‘banyak orang’. Another one which i like the most is at ‘beside Jelutong-Post office’. This store the sotung is big and yumme. (this one is a bit dirty!!) but the taste is very very good i bet you, you can never find at any southern part.

    u can try the mee goreng in sungai petani (near the bus express) and in kedah got many food u can try also like the nasi kandar ali and nasi kandar royal in alor star in good and many people going to eat there

    这摊印度炒面我已吃了二十多年了,想起以前上中学時,放学后踩单車去中華游泳公会学游泳,回家時一定轉去吃炒面,再加一杯八宝冰,人间美食,才八毛钱。Pulau Tikus balai 对面鸭蛋炒粿条,超劲,賢兄可试试看,也是賣了30多年的古早味。

    It was nice, but the quality drop even if u happen to meet this guy in the pic. Try the 1 opposide pulau tikus police station, swee kang coffee shop, just opposite this mee goreng end of the row, cheap and nice.
