阿贤口中的千层糕手说的就是这位年届70岁了,可是每一天却依旧在自家厨房,埋首钻研各式各样千层糕的馨蒂雅师傅!馨蒂雅师傅的糕点,简直足以媲美艺术品,不相信你看看,她制作的千层糕,图案千变万化、千奇百怪,花纹层层叠叠、纵横交错,而且色泽五彩斑斓,非常赏心悦目,重点是这些图案都是她用手工拼凑而成的!
创意层出不穷,手艺越来越风骚的馨蒂雅师傅,不只深获各族顾客的厚爱,而且她的千层糕早已经成为高官显要,甚至是皇室贵族逢年过节必备的糕点。
制作千层糕首先是将糖、面粉、乳化剂和牛油打至均匀滑润。为了制作出厚薄有致的千层糕,蛋糕师傅必需秤一秤每一层的重量,并小心涂拭均匀。
原来制作千层糕如此讲究,师傅必需确保每一层蛋糕压得实实在在的,才能烘焙出质地密实、花纹有致的千层糕。不是开玩笑,一手握着手工刀、一手按着铁尺的馨蒂雅师傅,就这么把刚刚烘焙出来的蛋糕,肢解成8个长方形条状,叫阿贤还一度怀疑,她到底是在制作蛋糕,还是在做图工啊?
刀功一流的馨蒂雅师傅,显然还不罢休,继续把蛋糕切成更小的三角形,然后煞有其事地将图案排列起来。怎么切,怎么排列,她似乎心里有数,可是旁人看在眼欲感到一头雾水。
馨蒂雅师傅的灵感源自于邻国印尼早就盛行的千层糕,不过求新求变的馨蒂雅却在家里的厨房创制出自成一格的五彩千层糕。
这种五彩的千层糕在砂拉越古晋流传开来之后,深获各友族同胞的喜爱,有些师傅更摒弃了原有的手工制作方式,采用各式模子以工业化方式大量生产,五彩千层糕因此广泛流行,成为砂拉越别具一格的美食糕点。
几十年下来,尽管市面上出现了不少以工业化方式大量生产的千层糕,但是追求美感的馨蒂雅师傅却从不贪图方便,继续以手工制作这种五彩千层糕。或许对于这位早已活似个艺术家的蛋糕师傅而言,唯有坚持手艺,才能够让原本只是一块蛋糕的千层糕,升华为既美味又雅俗共赏的艺术品。
