Khao Jam是暹罗话,Khao是饭,Jam则是掺杂的意思,而Khao Jam意即混合在一起吃的饭,华人把它称为青叶饭。

尽管已经用了40多种草叶来烹煮,出炉的青叶饭竟然还要混和至少10种配料才能上桌,然而它的功效却一点也不含糊—驱风祛湿!

每逢大日子或节庆,吉兰丹土生暹人都一定会烹煮青叶饭。加入了葱茅叶、红姜叶、蓝姜叶、黄姜叶、班兰叶、香茅叶、玉金叶、姜叶、大风蚁叶、吉仔叶、崩大碗和九层塔等40多种草叶来煮饭,已经叫人啧啧称奇,可是听说以前的土生暹人竟然采用多达百多种的草叶!

煮一餐饭也要如此大费周章,土生暹人对饮食的认真与执著,可见一斑。

为了炮制这道保健美食,吉兰丹“有人角落”(U-Lang Corner)的店主不惜到野外采摘多达40多种草叶,然后榨取新鲜草叶汁,倒入饭锅内连同泰国香米一起烹煮。

热烘烘、香喷喷出炉的青叶饭,犹如天生就披上了深绿色外衣一样,每一口饭都能咀嚼出芳香的草叶味和米饭香。

然而在上桌前,每一碟青叶饭还要添加鱼饼、鱼露、黑胡椒、辣椒酱、炒香搅碎的椰丝、炸香的鱼肉碎、切丝的黄瓜丝、洋葱、豆芽、姜花以及三种蔬菜。

那么多钟配料混合在一起品尝,味道多重,口感丰富,百感交集。重点是,这每一碟青叶饭目前只卖一块半。

据说,青叶饭最早是由吉兰丹土生暹人开始吃的,在泰国反而很少见。以往,土生暹人大多以务农维生,长期赤脚浸泡在田地里,再加上东海岸一带经常发生水患,因此有效治疗风湿的青叶饭,自然成了他们最佳的传统保健美食。

难怪,这家小小的“有人角落”咖啡店虽然只是营业了5年,可是一到午餐时间,店里总是挤满了人潮,大家似乎都深怕一旦来迟一步,就吃不到这种制作繁琐复杂的青叶饭!

吉兰丹叻沙的汤汁,是用油炸的鱼只搅碎之后,连同椰浆、黄姜、蓝姜、葱头、九层塔叶和阿叁片煮成,颜色偏黄,多种不同的材料却能神奇地混合出一派匪夷所思的美味,每一口都那么浓郁香甜。

吉兰丹laksam,配料和汤汁和吉兰丹叻沙没有什么分别,只是用比较粗的面团。

店家是吉兰丹土生泰裔。隐身在西马半岛东北部最边陲的吉兰丹州,由于地理上与泰国接壤,因此长久以来州内就住有许多土生泰裔。而要从外表、语言、生活或饮食习惯来识别他们种族血统,实在不容易。

U-LANG CORNER其实是福建话,意思是经常有人,客似云来的意思。

    我曾吃过khao jam, 也是在吉兰丹,但地点在卧佛庙前的小摊子。那是我第一次吃到这种食物,味道很特别,吃不出各种菜叶的重味,很好吃。听当地人说,是一种健康食品。
    我觉得这种食法,和客家人的雷茶有一点相似,值得一试哦!
    如有机会去到卧佛庙,也特别推荐另一种泰国食物–”shong tam”.

    i look this food khao jam … so nice colour nice delicious…. but i m from penang bukit mertajam dont see before this food khao jam.. i already taste all penang food until boring.. i want taste the new delicious..food that penang dont have.. so axian can u call them to opening branch food to penang..? i also can eat everyday here.. in penang ah mo kau also can visit here to eat more than 1 thousand type until penang become populor food in asia…. so axian u can recommend whatever food you surver before at many out stations. is not only khao jam ..anything foood in penang dont have only ya…. so they can do big bussiness in penang..can earn more money…cause of ah mo kau, arab kau,eourope kau and many more kau also have… but i only know how to eat but dont know how to cook… i like to survey food very much….

    this kao jam ( ulang corner ) now you can find in puchong… they just open branch there…. her son open one…. so you all can find it there…. the shop lot is inbetween 101 mall & gaint…. try to find out there thank.

    The Khao Jam 1st time i taste at kelantan is 8 yrs ago, is my b’frd bring me go is behind temple. He told me that is the best & they’re making by thailandnese…& i was heard in Puchong there oso got BUT the taste was not so good & the rice oso making is not truly that original wan..The MOST better yours shd gv a try to KELANTAN at the 卧佛庙前的小摊子..TKS!!

    Can anyone tell me where is the branch opened at Puchong? I stay at Puchong also but haven’t not seen this shop b4. Between IOI & Giant, there are quite a distance. What is the shop name? Is b4/after tesco? at d side of tesco or Giant? I’m Kelantaness, I missed kao jam very much. I miss home very much. Please help.

    Four of us went to the Bandar Puteri Puchong branch for lunch, located at the row of shops perpendicularly behind OCBC Bank (facing the new shop block currently under construction). We have tried the Kerabu Kosong, Kunyit Fried Chicken and Fried Fish, Curry with drinks. Total bill RM51, no complain., except the fish tasted a bit too salty.

    I normally bring my friend from outstation to Wat Jambu (Kelantan Sleeping Buddha temple) eat song tam, Khao Jam and Fresh Coconut while visiting few famouse temple such as Sitting Buddha and Double Dragon Temple in Balai, Bachok. And their reaction is very suprise with what they saw :) – “Is this Kelantan”?

    I also bring them for Thai Foods special such as Belut, Tebuan Goreng, Ulat Sagu goreng and etc.. located in Kampung Kulim, Wakaf Bahru. End up with “Will come for another round”.

    We try this Khao Jam青叶饭 at Bandar Puteri Puchong, May 09. We love the rice very much but not the fried fish & fried chicken because both fish & chicken its over fried. However i will back there for Khao Jam青叶饭.

    This aunty sold foods near by my house since I was born.
    After few years, she moved to Kota Bharu and continued her business at there. ~ Sell Khao Jam !

    i know a chinese auntie who is a kelantanese who can cook this khao jam, she do home-based khao-jam business and receive order for catering too..anyone from northen who like to try tis can contact me for more info ^@^
