这家华绅风味食馆,早在1990年代便已经是远近驰名的传统福建菜馆,可是在7年前,店主把餐馆搬到了新村附近相对比较不显眼的地点,最终餐馆不只设在毫无地理优势的二楼,而且更叫人不解的是,店家还取了一个新店名,仿佛是要以一家全新餐馆的姿态重新出发,但是如此一来,用了10几年光景打造的福建菜老招牌,便如同人间蒸发一样,从此和许多常客失去联络了好长一段时间。

自从1930年代便开始营业的牛肉粉,最初是由现任摊主夫妇的父亲所经营,直到今天所累积的老顾客不计其数,定时前来连吃两三碗的,也大有人在。原本的新九如茶室,重建后就弃用了新九如的名字,于是摊主干脆将牛肉粉摊取名为新九如牛肉粉,算是保留了老一辈的食客对新九如的集体回忆。

一天只卖两、三个小时就卖完的肉骨茶,你试过吗?阿头海鲜肉骨茶的生意也未免好得太离谱了,早上7点开始营业,到了九点半,摊主阿头竟然胆敢宣告“肉骨茶卖完了!”
问他秘诀在哪里?他说:“要用心、用感情!”
别的不说,单是选材,摊主便已经算得上是用尽感情、费尽心思了。每一天清晨,他都会亲自到菜市场采购当天的海鲜,由于坚持不新鲜不买,因此他每一天的海鲜食材都稍有不同,买到什么,就煮什么,原则只有一个:要够新鲜!
