锅气，是中菜的精髓之一。华人煮炒若少了爆锅抛锅的声音，就很难掀动食欲。
曼谷巷印度炒面摊主“马布”似乎不让华人专美，尽管其快速转锅和猛铲快炒的方式，与华人增加锅气的手法大不相同，却有异曲同工之妙，炒出来的面同样锅气十足。
别小看这些一炒一铲的动作，要确保面条最终有着均匀亮泽，又味浓身干，摊主说这些动作虽然看似简单，却不能掉以轻心。而我自己动手去炒之后才发觉，原来摊主的每一个动作都先后有序，力度轻重有别。
这便是源自于劳动人民每一天的生活积累，每一份积累都有着厚实的生活智慧。

地点位于菜市场附近的这摊曼煎糕，自38年前就开始营业。摊主夫妇俩合作无间，先生负责制作煎糕，太太则趁热把煎糕切一半，和起来再切成三角形的小块。热气腾腾的曼煎糕，仿佛嘴巴里含着满满 的花生馅料，似乎每咬一口都有齿颊留香，满面春风的畅快感觉。
